Starting your day with a yummy and healthy breakfast sets the path for the rest of the day. These skinny oatmeal bars are just as tasty as they are healthy and are very easy to prep and make. Great for those on the go and need something quick and fast in the morning. You can make them the night before and then store them in the fridge. In the morning just grab one and off you go!
Ingredients
7 Tablespoons light brown sugar
Dash of salt
¼ teaspoon ginger
¼ teaspoon cinnamon
½ teaspoon vanilla
¾ cup white whole wheat flour
1 ¼ cup old-fashioned rolled oats
7 Tablespoons melted coconut oil
10 oz. diced strawberries
1 teaspoon cornstarch
2-3 teaspoons sugar
1 Tablespoon fresh lemon juice
For the glaze:
½ cup powder sugar
1 teaspoon vanilla
2 teaspoon milk
Instructions
- Preheat the oven to 350 F. Line an 8×8 pan with parchment paper leaving an overhang on each side
- In a bowl, stir brown sugar, cinnamon, ginger, salt, oats, and flour together. Add melted coconut oil and vanilla and stir until combined. The mixture should be evenly moistened and crumbly. Reserve about ¾ cup of the mixture and set to the side for the topping. The rest of the mixture can be pressed into the bottom of the pan
- Scatter half of the strawberries, sprinkle with cornstarch, lemon juice, and sugar. Then scatter the remaining strawberries and sprinkle with remaining oatmeal mixture
- Bake for about 40minutes (or until the top gets nice golden color)
- Cool completely before serving
- For the glaze mix all the ingredients together. For a thicker glace add more powdered sugar or for a thinner glaze add more milk. Drizzle over the bars before serving.
